The thing with the UK is that it so desperately wants to be the USA, with its battalions of militarised cops with tanks and machine guns, and supermax prisons where you disappear into a hole for 100 years l, but we’re simply too loving cheap to even fund the repressive poo poo. Where does all the tax money go if it doesn’t even go to heavily armed robocops and AI Panopticons?

There's plenty of "solitary confinement in a superprison, then wrap that up in barbed wire and place it in the middle of another larger prison" confinement, but it's all full of Irish tradesmen who rented a van once in the 80s, so the actual spies with training from at least two state security services get put in "we're going to leave you in charge of the kitchen, don't walk out disguised as a sack of spuds pls" prison.

Here's my trick, the results can be uneven but I guarantee you'll get something crispy. It's also very easy. It's easier if you have an airfryer. 1. Select your pork cut - you need belly pork with a good amount of fat under the skin - think a cut out of Boris Johnson rather than Rees-Mogg 2. Night before - entire cut of pork goes into a pot of boiling water for 10 mins. Don't leave it too long or the fat renders out and it doesn't work. 3. Take pork out, make shallow slits on underside - this is to cut the connective tissue so it doesn't curl when it cooks - it'll have curled a bit from boiling so you know you've done it right when it lies flat. 4 You need to perforate the skin somehow now. Classic British is to cut crosshatches into it. The Chinese restaurants likely do it with a hand sander. I have tool which is essentially a bunch of nails rammed into a wooden handle. Apply liberally - the aim here being to breach the skin and let the oil from the fat bubble out when it's cooking, frying the skin. You don't want to go too deep since if you hit muscle it leaks water instead, making the skin soggy. 5. Season - lots of salt on the skin, whatever else you want on the other edges. 6. Keep uncovered in fridge overnight and take out 1 hr before cooking. 7. If using oven, apply a crust of salt to the skin and cook at ~140C fan for 30 mins. Then remove the salt crust and cook at 240C (or as high as your oven can go) for another 15-20 mins. You'll have to keep an eye on it for this last bit 8. If using an airfryer the steps are the same but you don't need the salt crust. 9. Rest for 10 mins and serve. Nb this is for Chinese style crispy pork which is flat. No guarantees if you want yours rolled up.
