They're just fish  As far as fish go (speaking of freshwater eel here, not as familiar with saltwater eel) they're on the firmer end and have a pleasant, mild flavor that generally gets paired with savory-sweet sauces, but it's still very identifiable as fish.

Texture-wise, they're a lot like catfish. In fact, once it's all sauced up, catfish can be made to replicate unagi very closely, which night become important since eel harvesting is horribly unsustainable.

The charred portions of it are slightly crunchy. It’s usually served with a smokey sweet eel sauce which is also amazing, and which is commonly used on other sushi rolls. Next time you have sushi, try unagi nigiri. If you like it, you can move to whole unagi-don bowls like shown in that picture, which is a large eel fillet served on rice omg I’m so hungry now.

Dope, thanks. I love catfish so I'd probably like eel, but I've no idea how to source any for hours and hours around me, other than ordering frozen Internet eels which is probably not the best start.
