Frustratingly, it was the most cooperative fondue I've ever made. Perfectly smooth, no scorching, stayed bread-scoopable well after being cool enough to touch. Just absolutely horrible because it tastes like if I licked my mousepad at age 17.

And reminds me, I have a pack of sodium citrate I bought on a whim and never got around to making cheese sauces with.
