it's using a tin of marbles and a projector as a physical implementation of a one-way hash on video frames. the point of a hash function is that the function itself is known which i guess is why there are details diagrams on the construction of your marble tin. this will be secure because if there's one thing a computer cannot fake, it's the passage of light through a series of glass spheres.
