re: induction chat, we wanted an induction range but split the difference and ended up getting a used Breville Polyscience and I am basically joined at the hip with that thing. I didn't understand how dope it was to be able to set a numerical temperature on a range but holy poo poo. Insanely expensive MSRP but we lived in the bay area at the time and just waited until one popped up on marketplace for cheap. YMMV if you do not live around tech people.
