Most meats where it's not the main flavour can be replaced pretty well. So a lot of dishes that require minced beef for example. Sausages is another. However every single bacon replacement I have tried is dog poo poo. And I think I might have tried them all at this point. But bacon lardons, there are some good ones. Seems getting the texture right in cubes is easy, in thin cuts is hard.
