This looks like the fridge wasn’t warming anything (is a typical fridge even capable of running in reverse?), and the water was superchilled as temperatures dropped. The shaking as the person pulled the water out of the fridge was enough to jumpstart the phase transition from liquid to solid. Edit: yeah, you can see the other bottle that got nudged in the final few frames. It turned solid also, so it wasn’t mere exposure to the air that did it.
