Roux darkened quite a bit during cooling. I add some veggies to quicken the cooling process.

I've never tried lard. Either peanut oil or butter. Might have to try it next time.

It may be somewhat heretical but I like taking extra-crispy fried okra set aside, and putting some on a bowl of gumbo like people do with croutons for soup

The only okra I like is fried at Lambert’s and spooned out while you dodge a flying roll coming at your head. So feel free to leave it out of any gumbos if you don’t want it.

Hot pickled okra can’t be slept on either. There’s an orchard in north GA that cans a ton of different poo poo and they do that with jalapeño in the jar and they’re great. Awesome with a Bloody Mary too
