I make this French Onion dip from time to time that people go wild for; my technique involves caramelizing a 3-pound bag of yellow onions in a large cast iron skillet on medium-low heat. The process is largely hands-off, but it takes a solid 3-4 hours (The secret is adding a little more butter and a splash of bourbon when the onions are brown but still have distinct shapes, around the start of hour 2.)
