Amon Amarth is sort of an outlier, because they do fantasy material but with growling. If I know anything about your tastes, power metal is going to lack aggression and you'll be bored with it. If you like Amon Amarth check out other melo-death bands. At the Gates, Soilwork, Carcass, The Haunted, etc. Also, get an album called "Those Once Loyal" by Bolt Thrower. Not the same genre but I think you will like it.

I'm not really familiar with them myself, but they're supposedly a pretty quintessential "Fuckoff bombastic fantasy metal" band without being all flowery. Apart from that, I dunno which is more important here, the big epic sound or the fantasy themes, so I'm a bit unsure what to say. Gamma Nerd already mentioned Ensiferum (man that video is so delightfully dorky  ), they're really into that whole "Swords and battles woohoo" thing and I find them really enjoyable at least.I also want to take this opportunity to again pimp Grand Magus. Man, after listening to this Cosmic Atrophy album I'm really depressed that the band's next album will never be released  Their sound is really crazy - it's a step beyond the Timeghoul/Demilich comparisons they get thrown.
