generally I enjoy cooked/inauthentic sushi like say teriyaki chicken crunchy rolls w/ lots o' cream cheese just as much as the most fancy ~pure bushido~ rice-and-salmon or whatever raw concoction

They don't actually serve any fish or have anything raw on the menu.

I don't get why they continue to use seaweed as a wrap. Its tasteless (or if its off it tastes like poo poo) and was originally used because your average Japanese peasant back in the day had nothing else so they used sea garbage. They could easily replace it with something more flavorful like a flour tortilla but no they stick with the lovely seaweed because "tradition".
