I don't know, the country and rap stations on the radio typically suck pretty hard, and that might have people conflating what they hear on the radio with the genres at large. So, much like "spiritual not religious", "everything but country and rap" blooms perennially. Although around here plenty of people listen to hot new radio rap & country, willingly, and the genre lines kinda just dissolve into "trendy pop stuff of the times" vs anything else.

i'm not a huge fan of modern country, but even though i find it boring i appreciate the ethos of genre that mainly seems to be about hanging out

Most people I know in that category like folk and bluegrass, and more lyrical and thoughtful rap and hip hop. Especially if it's class conscious or revolutionary but as a huge commie that's also probably down to just who I tend to associate with. I think a big part is just that people find themselves not liking music that's been homogenized down to a perfectly marketable slurry but don't have the language to express that. I'm not a music guy so it's probably an argument that's already well-known with proper terms and everything that I'm just unaware of.

The only genre I don't like is extreme noisecore and its associated genres. Sorry but while I can appreciate it being avant-garde I do not think listening to a pneumatic drill interspersed with the sounds of glass breaking is fun.

Modern pop country is probably the only genre I flat out hate. Besides that I can find something to enjoy in whatever I'm exposed to. There's a lot of country I like but the poo poo on the radio is just rap about pickup trucks.
