You can check cheapcaribbean.com to see what they're offering sales on. I had friends book through them and it went fine but I've usually used them to locate resorts or regions that had lower prices and then booked things separately on my own. Their descriptions of resorts are decent too. Places in the Caribbean may be closed too, depending on when and where you're looking. Not a viable long term strategy for them since their entire economies are based off tourism and given the levels of chlorine in the pool water it seems an unlikely place to spread any kind of disease, but just double check where they're going on letting in arrivals before you put down non-refundable money.
