A lot of power metal bands fit that description. I don't know who's big now, but check out Stratovarious, Helloween, Blind Guardian, Gamma Ray, Avantasia and Kamelot.

High on Fire gets listed as stoner/sludge metal pretty often. Maybe check out Kyuss, Mastodon, Orange Goblin, Sleep or Electric Wizard and see if any of those grab you.

Their last few albums have a pretty consistent sound, but yeah, for a while they were operating in a different genre with every album. The closest thing they've done to Perdition City is the Teachings in Silence EP, but it's not really all that close. You might like Kveldssanger too.

I hear a pretty strong Jethro Tull influence in the song you linked but the vocalist sounds like he belongs in a bluegrass band. I'd call it prog for lack of a better term, but I don't know if you're going to find much else like that.

The soundtrack for Brutal Legend hits on a lot of the high points of metal as well as some more obscure acts that are worth checking out. It's a lot of music, but if you go through it you'll get a sense of what's out there* and what you like. Come back with the standouts and we can give you more specific recommendations.

*It's ten years old and missing songs from some of the biggest names so it's not comprehensive, but those aren't really big issues if you're just starting out.

Over the course of their career Ulver's hit a lot of different sounds but you're not going to see that much variety on any single album.

Check out Igorrr, Diablo Swing Orchestra and Unexpect. If you're OK with stuff that's more clearly metal, there's a lot in the post-black metal scene but it's been a while since I paid much attention to that so I can't make a lot of recommendations.
