 The Wolfenstein series springs to mind, although I haven't played the most recent one. It's possible you can't kill Hitler in it, but you can kill him in some of the games.

i'm pretty sure they gave sniper elite v2 out for free on steam so they could sell the 'kill hitler' dlc

I think Germany buys a lot of video games and they don't let you portray hitler in popular media or something somaybe thats why you don't see him anymore
