Personally, i think Joseph would have the edge - kaiji's looser morals would mean he would eventually attempt to cheat, but joseph would use his hamon to prevent kaiji from cheating, or even feed him false information - this could be crucial in the late stages of a gamble.

Joseph would lose. Even with Hamon, in a water pouring based gamble WITH the ripple, he loses to D'Arby the Gambler. D'Arby isn't even close to the gambler that Hyodo is. While he's got a couple of souls, Hyodo has assembled a soul crushing empire spanning continents. And let me tell you, it might not be clear, but I think Kaiji's going to take Hyodo down, when all is said and done.

They hinder him more than they help. In fact, the final maneuver must be done in spite of his friends. He has to best them physically to pull it off. Now, perhaps if Kaiji's opponent was Akagi, or Gambling Emperor Zero, then I would not think his victory was assured.

Yes, kaijis friends betrayed him, which allowed him to win. Kaiji needs a "hook" to win, even specifically looking for a crooked casino before finding the pachinko machine. Against a single honest opponent, he's helpless.
