Better maps is probably the stupidest one of those, better team modes is fairly debatable. There's more things you can do with the weapons but Quake's entire arsenal is just better and you can rocket jump with some of them.

UT has ones Quake doesn't but bombing run is the only one that's not incredibly stupid, plus it'd probably be better if it was in Quake anyway, same as CTF and TDM.
