Salt isn't a condiment, it's a requirement. Yellow mustard (of the popular cheap regular kind) is crap. I honestly can't decide between Dijon mustard, soy sauces of varying types, vinegars of various types, and chilli/garlic sauces. I could live without most condiments, like ketchup, mayo, horseradish/fake wasabi, and BBQ sauces; but not without dijon, vinegar, soy or chilli sauces. Do you buy it or make it? I've only got tamarind concentrate to use for cooking, if you make it I'd try to make a usable sauce from my concentrate. I love the sambals that have tamarind in them.
