The question could have various reasons behind it. Some jobs would want you to keep working and they won't want to train people only to have them leave months later. Others may be interested in on-going education (for most of your job applications probably not the case). You could answer that you would be interested in further education if it is job related and that would cover both reasons.

You could condition the job question as "I would prefer a full time job but I would be happy with a part time job." It sounds positive and shows a willingness to work along with flexibility.
