You should provide 2-3 different layouts that people can pick and choose to populate their photos in. That way we avoid a schizophrenic book while keeping it looking different enough.

I bet my 150MB photos pale in comparison to the LF guys'. But yea, mine are RGB, I just remembered. It's a drive link so I can swap them out for CMYK versions.
