I thought the idea of a temporal cold war was pretty loving cool, along with how and why they developed the technology that you see in the chronologically later Star Treks, but the execution was so terrible. I binges watch and expected sooooooo much.

Enterprise was way better than people give it credit! The theme song will always be atrocious, but Bakula did well as a poorly written character (Archer would have been okay as anyone on the crew except the Captain/Humanity's first ambassador to the galaxy), half the characters were decent (Tripp, T'Pol after the first half season or so, and Dr Phlox were all good, and everybody loves Shran), and most of the major plots were solid, especially as the seasons passed. Admittedly it's very not perfect, with half the characters being pointless and dumb, and the worst final episode to a show I've ever seen, but the season long arcs were a nice follow-up to DS9's doing the same, so for general Trek purposes of throwing it on in the background while folding laundry it suits the bill just fine. Besides, anything is better than Voyager.
