In all seriousness people are going low because when they aim for the torso and the receiver curls up their upper body in preparation for the hit the defender often ends up hitting their helmet and gets flagged. I don't think hitting the torso accurately at high speed - without coming into contact with the helmet - is as easy as you all make it sound.
