Short version is it's better for a player to wear just a single helmet during the season, so it's broken in and fits better and whatnot, so that's why all the alternates with different colored helmets from a teams normal set (Such as the Creamsicle Bucs and Pat Patriot throwbacks) went out the door a few years ago. Apparently repainting helmets during the week doesn't work for whatever reason? They can change the decals on the helmet though, like the Dolphins do with their throwbacks, and the Giants will do later this year for their color rush/throwback with the old GIANTS script, among others.

I asked this question a while back and it has to do with concussion protocol. Long story short, players will choose helmets they feel will protect them the best for the season. Switching to a different colored helmet for a single game would violate that, whereas keeping the same helmet and just switching out decals obviously doesn't.
