QoS is definitely an example of rapid-fire editing used to overload the senses, and sound editing/mixing to ground the experience. But it's one of the best examples of that category of action. The rooftop chase has an incredible amount of cuts, and yet it manages to somehow keep coherence while being incredibly fast-paced and thrilling, juxtaposing the chase with scenes of public sport and slow, everyday life, and syncing power notes in the score to specific actions.
It's not usually my cup of tea, and when done wrong this kind of scene can be unbearable, but I rather like it.

Another example of mixing that allows the user to breath is after the boat chase when the final boat flips and everything goes mute on the track.

The last minute of the flight chase absolutely floored me at the time, and makes action scenes in Skyfall and Spectre look not only ridiculous, but tedious.

And QoS even outdoes the Bourne movies at their own game with cqb, keeping it short and brutal, and focusing the camera on the objects involved in the fight, and emphasizing the ruthless qualities of the Bond character that Casino Royale reintroduced.
