Long Dark is good but it's hardcore on the survival elements and doesn't have building if that's something you're interested in.

It's purely a game about holding out in a very hostile environment where the biggest enemy is actually the weather (and the main hostile element outside of that are the wolves looking for a meal.)

First I'd recommend scratching Wasteland 2 off that list unless you really love 80s CRPGs with most of their warts. It's a good game, but it's very aimed at a specific niche of folks who like working past obtuse stat systems. Basically it's very true to the CRPGs of two decades ago, for better or worse.

Banner Sagas are basically light tactical battles interspersed with moral decisions (only the latter can kill plot/combat characters permanently) wrapped up in an absolutely gorgeous art style.

Pillars of Eternity is a really nicely done throwback to the Infinity Engine games but be warned it starts really, really slow and does seem to like having filler fights that are still life and death situations. If you want something that plays how you remember BG2 playing, get this.

Divinity Original Sin is an odd beast. It has one of the most fun combat systems I've played ever that heavily carries over into the non-combat areas of the game (most of the rules involving elements apply outside of combat as well, and all spells can be used anywhere.) The story is nothing special, but there is a certain charm to a lot of it. Of the list it's probably the one I'd recommend the most.

The carrier is one of the most powerful weapons in your arsenal after upgrades. But at the same time it's risky to bring into battle.

Huge world filled with quests to collect bear asses. The overall story is really bland but some of the faction quests are pretty decent. The DLCs are also better story wise.

Basically if you want something you can just turn your brain off and goof around in another world for a while you can do a lot worse.

Yeah these two are pretty solid (Techno being a standout.)

The Blackwell series (play in order, the first few are very short)
Anna's Quest (avoid the other stuff from Daedelic though. Most of them are bad)

Yeah this should've been mentioned. The class system is actually pretty drat good. Also, you can respec at any time for what shortly becomes a pittance in cost.

The combat is also pretty fun in general in a ARPG way.

That Dragon, Cancer is kind of a dragon to actually play. It also makes some weird decicions at points just to have gameplay.

Evil Within is just dire. I'd say drop it and That Dragon for sure. Far Cry Primal is also an Ubisoft open world game, but a decently fun one if you mostly used the bow and want to have animal buddies.

If you played Endless Space 1 this isn't surprising at all. It was just an extremely bland game with some huge glaring faults. Legend and Space 2 are massive improvements.

Should I play a different Tales game? Maybe one of the Hyperdimension games?

Rabi-Ribi is highly recommended. It's just a really solid metroidvania with some bullet hell bosses.

I always recommend Recettear but it might not be what you're looking for. It's half shop management simulator, half realtime dungeon crawler. Extremely good though and goons handled the translation.

I'd also like to add the following:

Assault Android Cactus - just a drat solid and polished twin stick shooter/bullet hell with a varied cast of characters that all play fairly differently (and even more to unlock)

Ninja Pizza Girl - a fun almost endless runner

Gurumin: A Monstrous Adventure really charming action-rpg about a little girl and her monster friends. Actually I'd probably recommend this one the most.

ICEY a really fun sidecrolling beat'em up with some really fun meta narrative tricks.

Of course there's the whole Ys series entries available on Steam. 1 and 2 have aged a bit, but Origins is really good.

EDIT:

Another one I forgot Fortune Summoners also translated by goon-affiliated Carpe Fulgur. Just a genuinely charming side scroller starring three mage girls.

Astroneer: - really bloody pretty and has an awesome interface. There's a decent amount of content in the game, but at the same time there's no challenge to it currently. It's purely build for the sake of building and exploring. Devs have been incredibly quick with fixing most bugs.

Stone Hearth - one of the better survival town builders I feel. The art design's lovely, the UI is easy to get a hang of overall, but it does have the issue of once you make a stable town not much is going to threaten it. Development is a little slow but ongoing due to the small team but it shows a ton of promise.

Starbound - the only "finished" game on your list but I find Starbound kind of dull to play as the devs decided a creative sandbox game needed to gate everything behind grind and tedium. It's a shame too though as most of the game works really well. It just makes you do unfun things to experience a lot of it for no real reason.

A little bit. You start getting enemies with attacks you can't counter and must avoid, poison abilities, maps with traps, etc. as it goes. You also start getting some equipment that adds quirks after a bit.

Death Road to Canada is Oregon Trail essentially, with many more random events and top down action pieces when you visit locations and an extremely goofy, wonderful sense of humor.

Sunless Sea is...different. The game has amazing atmosphere but also requires a ton of patience to really shine. Do not get stuck in the trading trap, you get rewarded far more for venturing out into the unknown and discovering stuff than just hauling from port to port. As far as I know there's no real ending, just a various number of stories and events you can encounter on each run. The game ends when your character retires (and passes on some items to the next if you wish) or dies.
