There might be a few more complications, but that seems like the simplest solution. I guess the culprit would also have needed to hide his lock somewhere nearby before the session so it wouldn't be found when he was searched

I thought they were only searched after the meeting, and not before it.

It looks like Mont Blanc is the name of a hotel in Nagoya, so it appears that "Mont Blanc Unagi" is eel from the restaurant at the hotel.

One detail is that the line of blood is sharp where the sheet was cut, and that there is no blood on the floor below it. This seems to mean that the blood was dry when the sheet was cut. This could mean that the murder happened, and then later on someone came in, saw the message, and cut it off. This could mean a second person did it to protect the real killer.
