Yeah Road Rash and Wing Commander 3 were my first thoughts, Road Rash especially might actually be the best version of that game. There's a pretty good port of The Need for Speed as well if I remember right.

There's a pretty good port of The Need for Speed as well if I remember right. 3DO Road Rash and Need for Speed were the originals and the rest were ports from those, but they're not the best versions of the games. The best version of Need for Speed is unambiguously the Special Edition PC version, it has a ton of extra content and a high resolution mode. Road Rash is more complicated, the Windows version has a high res mode and runs at a flat 60 but with some visual compromises, the sky looks like poo poo and it runs at 256 colours only instead of 16 bit so there's some ugly posterization here and there, but the PS1 version is basically the same as the 3DO version but with a much better framerate. To be honest my pick for both would probably be the PC versions, driving games just feel better at a consistent framerate and while the visuals are a tradeoff, it's not like they're flat out worse. EA really oughta look at remastering them at some point, 32bit Road Rash is still quite a lot of fun and there's never been a definitive version of it. Echoing the AD&D games, since they were exclusives (although the second one had a lovely PC port, apparently?), and they're historically important as the last SSI D&D games.

Star Control 2 has rewind-able cutscenes/dialogue and that's a feature every game since then should have had.
