I know the plot dips into some lovecraftian stuff with Sin and all that somewhere down the line. A "dream" in FFX is basically a summon. It's not really lovecraftian, it's just that Tidus and Zanarkland aren't "real".

Of course the first person he befriends is his big titty mermaid princess wife

Will should have lost all his memories, but Gracefeel let him keep them. Re-read chapter 11. And there’s no indication Gracefeel would let him keep them again either. Especially if he intentionally suicided for that purpose
