making some spaghetti and meatballs for dinner. I’m pumped

Spaghetti and meatballs came out good. I went with 1 part lamb 2 parts beef to change things up a bit and did the sauce from scratch.
I've found that cooking the pasta to alllmost done then finishing them off in a pan with the sauce makes it so much better.

I now await angry Italian responses.

I grew up eating them cooked in the sauce and not baked first, so that's how I make them now.

My mom always made them baked with sauce, then I met some actual Poles that straight up boil them in water then put that weird sweet polish ketchup on them. I'm not opposed to either way personally.

Also a protip I learned from them. You take a knife and cut down the main stem to make them easier to eat.

That would actually make sense now that I think of it. I was fortunate that my mother's side cooked all kinds of different dishes growing up, while my father's side just boiled everything to death (Irish).
