Laslow posted:as a former pie slinger, that costco machine is cool, having even sauce distribution is crucial to a good pizza. also having better control of sauce consumption is good for inventory/ordering. You can see the scale they use to weigh how much cheese to put on the pizza just to the left. They use a pound and a half of cheese on the cheese pizza.
