Neither of them are supposed to taste like anything. You give flavor to tofu based on how you cook it. Water is ok without flavor, but if you must have it then you can add some lemon or light juice, or just move to Flint, Michigan you idiot!!!

I prefer water to soda tbqh. Op, have you tried transitioning from sparkling water to regular water? Or if you need something heavier, ferruginous/chalybeate water.  As a bonus, the surroundings tend to look pretty.
