I recently have figured out that I don't always need to feel bloated all the time, and if i cut out gluten and lactose I feel better.
I searched through the 20 pages of topics here and was surprised to find there wasn't any active topic already for Gluten Free recipes.
I figure there must be dozens of us out there that need to eat gluten free so I thought it would be good to have this thread act as a repository.
I don't mind if recipes that are posted here contain lactose as that can usually be worked around.

Now I'm someone who usually put off cooking as much as possible but I want to start getting some recipes going that can be used to both feed myself and make me look good if I have friends over.

Here's a recipe I made recently that tasted really good and sounds fancy af:

Crispy Wasabi Potatoes & Salmon

What you need:
Garlic (crushed)
Potatoes
Wasabi Paste
Gluten Free Soy Sauce
Butter
Salmon Fillets
Sesame Oil
Gai Lan (Chinese Broccoli)
Spinach Dip
Sesame Seeds (optional)

Method:
If the potatoes are large, cut in half. Put them in a large microwave safe dish and add 1/3 cup water - cover with plastic and cook on High for 10 minutes or until just tender and drain.
Preheat oven to 190c (374f) or 170c (338f) if fan forced. Place potatoes in large baking dish and use a potato masher to crumble (or fork or whatever).
Combine the garlic, soy sauce, wasabi paste and butter in a bowl and drizzle over the potatoes. Spray with oil and cook for 35 minutes.
Place salmon on top of the potatoes - season and spray salmon with oil.
Bake for a further 10 minutes or until salmon is cooked through and potatoes are crisp
Heat a large non-stick frying pan over medium-high heat and add the sesame oil. Stir fry gai lan for 2-3 minutes until just wilted - add a splash of water to soften the stalks.
Top salmon with dollop of spinach dip and serve with gai lan and sesame seeds.

The hardest thing you're having to do in this recipe is hit some potatoes a bit and stir the wasabi, garlic, butter and soy sauce together and heat up some gai lan in a pan. But people will hear the name and think wow that must have taken some skill to make!

I'm going to reserve some first replies to try to keep a link directory of a sort to peoples recipes.

Thanks for starting this thread.
My wife and I are insufferable gluten free weirdos.

Had some Costco salmon in the freezer so made this tonight and was really impressed.
The wasabi/butter drizzle is delicious, it could go on top of the salmon tbh.

I omitted the spinach dip because good luck finding that at an Asian supermarket.

PS for Costco sized filets you should up the heat to 400f and double the time imo. Broiling for the last 5 mins helped, too.

For a few of these you'll need gluten free kecap manis, and for one you'll need gluten free soy sauce.

This isn't a specific recipe recommendation, rather a recipe site. Minimalist Baker is pretty much one of my go to websites for special diet recipes. Contrary to the name, it's not all baking recipes, and they have a lot of entrees, appetizers, snacks, etc. You can filter by recipe type (those previous categories), special diets (gluten free, dairy free, vegan, etc., and combine them), and a bunch of other filters. All the recipes also fit at least one of: 10 ingredients or less, 1-bowl, 30 minutes or less to prepare.
