Just remembered the time I made myself a taco salad and absent mindedly put uncooked chorizo in it. I still ate it though because I didn't want to waste food and nothing bad happened.

isn't chorizo cured? i eat it raw all the time

googled out of curiosity - i guess i don't eat it "raw" since curing makes it not raw lol. never seen a "fresh" version here

Oh well, fine. It's been over a decade since I made it so I might be forgetting things.

First, peel and boil a load of potatoes then slice them into thin rings (half a centimeter). Next make the filling, fry up a pile of diced bacon with some chorizo, then add a bunch of leeks. Pour a litre of cream over that and let it reduce - then thicken with cornflour slurry.

Get a casserole dish, layer the bottom with potatoes, then the filling and repeat until it's all done. Toppings varied. Sometimes it was just cheese or breadcrumbs. Maybe a mix of both. I once seen my boss crumble up a bag of cheese and onion flavour crisps for the topping. Might even have used some spring onions.

Bake in the oven until the topping is crisp. Don't come crying to me the next time you visit your GP and he lectures you about blood pressure and cholesterol.

Stayed at a friends house for dinner when I was in high school and their father sat at the head of the table and served everyone and you could ask for more once you had completed the portions on your plate. Also everyone mostly whispered it was fuckin bizarre.

I was like 17 with a job and a car and was treated like a child. I ended up eating a Gyro after because I didn't want to keep asking for small portions. That's just how they did dinner.

It was the Mexican kind of chorizo that's seasoned raw ground pork.

One of the grocery stores decided to have a BBQ place inside. When they opened they were great. I would get a brisket sandwich with sauce and two sides for like $10. I went a few months later and they had taken everything off the menus except for the BBQ, no sauce, nothing. I hit the Taco John's next door.

The Spanish kind is cured, the Mexican kind is fresh, both kinds are delicious
