It's based on a weird desperation hack some fishermen figured out a long time ago, some semi-porous river pebbles in teeming waters would retain some fishy flavors from, well, being in fish water for years.

So they occasionally used some of those as seasoning in soups because at the time preservatives didn't really exist besides salt.

This was the later result of taking those fishy rocks and just turning them into a sauce delivery system
