Oldie but goodie: Knytt Stories. Its a fairly simple metroidvania which is less an actual game (although the creator made a few levels for it) but rather a level editor. It has a fairly simple but atmospheric art design that people have made a whole lot of content for. Prime 3 is great, it just stands in the shadow of the original Prime. (And Prime 2 imho but I'm a sucker for light world / dark world gameplay)

In Dark Souls II eventually enemies stop spawning if you kill them enough (like 10 - 15 times) and you have to use an item to bring them back at a bonfire which bumps them up to the next difficulty level. But that's more explicitly a "make it easier to ram your head into the boss" mechanic than anything.

Yeah the EMMIs wore out their welcome towards the end but they were pretty cool the first few times. My main issue with Dread was more that it lacked the shear atmosphere of Super or Prime, although mechanically the series has never been better.

Harmony of Dissonance is the only advance / DS era Castlevania I don't like -- as much as I like light world / dark would style gameplay the two versions of the castles aren't really different enough to make it interesting imho All the DS games are great though -- Dawn of Sorrow isn't quite as good as Aria but still enjoyable, Portrait of Ruin is underrated and Ecclesia is a perfect 2D castlevania swan song.
