A lot of star systems are binary so it probably happens all the time.

Or do you just mean like when a planet in our solar system passes in front of a star in our night sky? Because that happens constantly.

I know you mean like how one would see from within a different stellar system but we do get to see planets greatly eclipsing stars all the time and not just dimming it. Well, some of the time. Enough times.

Right now somewhere in the galaxy one star is completely eclipsed by a planet, but we will never know because it's tens of thousands of light years away and human civilization will be completely changed by the time the light reaches us.

Occlusion, in general, when a planet passes in front of the sun. (Or more generally, any object passing in front of another object, but we were talking about planets and the sun here.)

Occultation, specifically, if the planet is large enough from your point of view to block out the sun entirely. Like if you are getting behind Uranus for example.

Transit, if it is not. Like we can see Mercury or Venus do from here. Or like Earth does, seen from Mars.
