Presumably the same reason Marvel does it, namely that it's easier to maintain control over the final product with an inexperienced person with less connections who is probably just glad to be there.

Perhaps not quite as prestigious a role, but ho hum. Where are you getting this information from that they're replacements for striking actors? The SAG members of the cast aren't filming and the non-SAG members who are in Equity are filming. It would be a breach of contract for the Equity people to decide not to film, it doesn't have anything to do with being a scab or not.
