I just taste tested all the peps and they're all good but the one I expected to be the best (the one I found late in the game with the artisanal casing that I had to remove) was pretty mild in flavor like if you want a good bold pep taste it would absolutely be last, at least prior to cooking. We'll see how it shakes out after it gets onto a pizza. Cheese is now shredded, I think it's dough time, this is where it may all fall apart.

Also finely diced pep is good too, In fact most of the pizzas I make now is topped with finely chopped veggies like brocolli, olives, mushrooms, peppers, leeks etc and tossed in olive oil and salt.

See how the very top peps got burned a little and cupped the grease? That is how pep is supposed to be on pizza, large or small  Cutting pep into chunks takes away the magic and then you're just adding sausage to the 'za

What kind of casing? I hear natural ie intestines curl to give you the best grease cups. I looked at the pictures but I didn't see any deets on the casing. I'm not a food snob though and I'd eat all the pepperoni. With or without the pizza part.
