update: I have made a fresh roux and drizzled in the too-thin gravy, and it looks like the emulsion has taken and the consistency is better now  yospos kitchen success story

I’d prefer an all-plant one, assuming I’m living in a place where restaurants have a good vegan selection (ie not where I am living now) also all the all-meat diet people I’ve known have ultimately gone off the deep end ideologically speaking
