Yeah the crust is traditionally sloped like that so the grease drains off. Very health-conscious. And uh, they bake a kitchen towel right into the cheese to absorb the rest of the grease. Just pick as much off as you can. Did I mention back in the 20's they used to add baking soda to the sauce to make it all bubbly? It was really the height of trendiness.
