Though at the top level of super GMs in chess they don’t play it as much the Caro-Kann really is a winning defense against 1.e4 and allows you to bypass a lot of shenanigans by white, hell, even the super GMs will play a Caro every now and then in a classical tournament and most definitely in blitz play. I’d suggest the Botvinnik variation if you can get into it as it’s more dynamic for black than the standard advanced variation
