The last one is a poster for the Cowboy Bebop movie and the woman in the top-left is a character named Elektra who only appears in the movie, same as the man in half-profile to the right of Spike who is named Vincent. Really everything on that poster is iconography from that movie.

If any of y'all haven't checked that movie out you should, even if you're all "ew anime touched me burn away that flesh now that unholy Nippon has touched it." The animation is drop-dead gorgeous, the soundtrack is unconventionally excellent, and while it's hardly deep or significant it's a drat good action flick.

And just to put a watertight seal on how huge a nerd I am, I think that Ant-Man poster is fantastic.

So what's the deal with the crumpled paper texture anyway? Does it make their posters of massive hollywood blockbusters more "indie"-ish, or do they just not want their minimalist posters to have a flat background?

Something that just has a blank background could look dull while something with a crumpled paper texture only looks stupid. Also it often might be an attempt to make stuff look vaguely retro.
