I think the mole chicken mistake was that I used thighs. They're comparatively more fatty (and flavorful) and the texture was just wrong and the whole thing kinda soupy. It looked so good when I saw someone successfully make it  I can improvise on the stovetop - I can cook anything Italian. Maybe I should follow instructions for a change with the slow cooker?

Best chicken recipe ever: Heroin Chicken. That particular version recommends breasts or wings, but I've made it with thighs and it is amazing. If you're doing low carb you can even pretend it is diet food, but you aren't fooling anyone. It's basically Shake 'n Bake with parmesan instead of bread crumbs, which sounds awful, but somehow it is great.

Easy delicious chicken recipe: buy a four-pack of skin and bone-on chicken breasts. Buy this spice mix. Follow directions for marinade on bottle. It took that whole time plus late-night figuring stuff out and I'm so cranky now. But my husband tried to stay up with me and snored on the couch through most of it which was really sweet. Edit: I was going to recommend Smitten Kitchen too! I trust her stuff a lot, it's a good place to get pretty simple recipes/ideas that won't fail.
