I have nothing to contribute to the cooking discussion but I wanted to post this: I got home about an hour ago and five cats ran up to greet my car, I think I'm officially a crazy cat lady. I googled my username and the second result is my old OKCupid profile which was moronic to use the same name for so I need to change it stat (even tho' I'm pretty much the most inoffensive poster ever). (Also, I thought the profile was clever when I wrote it like four years ago but now it sounds annoying)

My dog on the other hand was physically grown but was mentally a puppy so he was super awkward and not trained at all even after 4 years he constantly smashes his head into stuff because he forgets how big he is he's also terrified of my cat despite being 4 times as big as him

I use this as a base - 1 medium onion (or a few shallots), minced 3-4 stalks lemongrass, outer leaves remove, ends removed, minced handful of basil leaves 2-3 cloves garlic, minced 1 tblspoon fish sauce 1-2 inch knob of ginger, peeled and minced 3 cans coconut milk about 2 cups of chicken stock sweat the onion and lemongrass together on low heat until soft but don't let them brown. When they are soft, add the ginger, garlic and basil and saute for about a minute, don't let the garlic brown. Add the fish sauce, coconut milk and stock, bring to a simmer and simmer for 20 minutes. Strain the solids out and return the liquid to the pot. From there, you can do almost anything - I dont' normally use prepared stuff, but the Thai Kitchens red curry paste and green curry paste are a lifesaver here. Take about 2 tblspoons of either and whisk it into the liquid. Add 2 more cans of coconut milk and bring to a simmer. Here you can add anything, sliced mushrooms, bell peppers, sliced chicken, tofu, etc. Tonight I have sliced chicken, a red bell pepper, a handful of sweet peppers and sliced mushrooms. Add everything, simmer for about 10min until cooked through or soft, add salt to taste (usually takes a couple of teaspoons) and a squirt of lime juice at the very end, maybe half a lime.
