JERRY! HELLO!

Fried pickles are just great in general.

I'll come out and say that I love the stupid Red Lobster biscuits. Over salted nonsense that they are and everything. So much that my mom bought the box mix of it that they have for sale at Sam's Club (which aren't as good).

I'm not a fan of the Hooters or BWW ones, they are soft pickles in onion ring batter.

I like a Claussen-style crispy pickle in a tempura batter. And chunks, not slices. You want the pickle to stand out.

Interesting. I've eaten well at all the New York spots he mentions, but I'm one of Ladner's 1%: a foodie, in the business, in the city. I'll schlep to Greenpoint to eat hand pulled noodles in the basement of a bar with no name that are only served after midnight. The new weird food thing is fun, and it's not for everyone. The quote about the economics about sums it up, but I think that despite the media attention this new weird thing is getting, it's not designed to be for everyone, and that's okay. It'll filter it's influences into something new that the next kid who just wants to open a neighborhood grill, but to smoke her (I hope) oysters with black tea, and the world keeps turning.

I don't know how much I agree with the concepts presented (nor do I think I want to get into a debate over them), but I was absolutely shocked by the thoughtfulness and contemplative attitude, and good writing, from the Man Vs. Food guy.

EDIT: Oh Jesus loving christ, Alan Richman, not Adam. I'm leaving this here as self-flagellation.

Whether he's right or not, I don't give a poo poo. I'm not reading it because he's a oval office.

quote:

Bourdain is, as you’d expect, noticeably softer on Emeril and his ilk, but he devotes an entire chapter to one Alan Richman. In fact, the name of the chapter is “Alan Richman Is a Douchebag.” Back when Richman slammed Les Halles, Bourdain told Grub Street, “It was like being mauled by Gumby. Afterwards, you’re not sure it even happened.” But he’s much more vociferous here, reprimanding Richman for failing to mention “the most cogent point” that, weeks before the review, Bourdain had nominated him for “Douchebag of the Year” at the South Beach Wine and Food Festival (before that, Richman had put down the New Orleans restaurant scene in GQ).

After blowing three pages slamming Richman for the New Orleans put-down, Bourdain then goes on to criticize one of Richman’s “restaurant commandments” against absentee chefs: “Richman’s Commandment #19 is a loving insult to the very people who’ve been cooking and creating dishes for him for years. What’s worse is that, once again, this uniquely gas-engorged douche knows better. But rest assured that while he has no problem giving the stiff middle finger to the people who actually prepare his food, he will be sure to remain in good odor with the ‘celebrity’ chefs he claims — on our behalf, no doubt — to be outraged by.” He admits that Richman has a “discerning palate,” but returning to the subject of his Les Halles slam, decides, “So, maybe I got it wrong. Alan Richman is not a douchebag. He’s a oval office.”

HA! HA! NICE! WHAT A TOOL!
I agree with the article but Richman misses out on the clientele of young professionals in New York that is at least as interested in having something to talk about as they are in having good food.

Many people would rather have a good plate of food that they've never had before than an excellent plate of food that they have had before. These restaurants serve that desire very well.

So today is a good day for my coffee game: I found a gently used burr grinder for $5 at a Salvation Army in Florida. Can't wait to get a nice consistent coarse grind on my beans for my press. Might even bump up to a chemex, it's a whole new world.

This is already a booming little business in cities like Shanghai and Hong Kong. Chinese modern weddings are incomprehensible affairs.

I worked in and around the wedding industry for years and it is huge racket second only to casinos in it's ability to separate suckers from their money.

Fun fact, almost everyone in the event industry has a higher mark up for weddings. Call say a random florist or caterer and ask for a quote for a "business meeting" and then have someone call like a week later asking to quote the same thing for their wedding. Almost certain you get a higher quote with the second one.

Yeah, but I mean even without a difference in scale wedding get a higher mark up usually. It makes sense, for most people their wedding is the only "event" they will ever produce so they have no idea what stuff should cost. I think most people also don't realize that every price you are ever given has some wiggle room.

My girlfriend and I were pricing things up here in Denmark at one point. A wedding comparable to the one we'd just been to, with ~60 guests for snacks & champagne, sit down dinner, open bar (that would close at 2AM), dancing to a good band and breakfast the next day (people would pay for their own rooms) would end up somewhere around $20 grand at a hotel that does a lot of weddings.

Or we could rent an entire old beach hotel for $5k for the whole weekend, 40 double rooms including cleaning before and after, and self cater things for another $5-6k including drinks, just by not buying a package wedding deal.

They really do go "cha-ching!" as soon as you say the word wedding.

In other news, I went to the grocery store today and spotted Velveeta brand "Cheesy Ranch".
