A bit more involved since I was looking for recipes to do something with some Manchego cheese I'd been given (and never had before) - Lamb-Stuffed Aubergines with Moorish Spices and Manchego Cheese (looks like I'm on a ground lamb and cinnamony things trip at the moment ): drat that cheese be oily. I like to make a Japanese style risotto where I swap sake for wine and use dashi for the stock. It's quite good.

I made a nice meal tonight. I made risotto. I didn't use arborio rice, I had some short grain rice I figured would work just as well. Not bad for my first time. It was delicious and savoury but a little bit hard still. I threw this in with the oil and let it bloom a bit before adding the rice. Roast chicken Plated with acorn squash and greens. I hate greens, but my husband makes me eat them. I'm not great at plating, and I was hungry. It was pretty delicious. It was ruined halfway through by my husband bringing up an argument from last night, then getting all mad at me. Oh well, I guess I'm nourished. I dont think you're obligated to eat greens if you don't wanna if you can put away half of an acorn squash in a meal. That's fiber and vitamins enough to make you a well oiled poop machine for the rest of the week. Everything looks lovely, even though your chicken seems to have sprouted a fork. I also have the same knife block in my parent's condo (the one with the stick dude), I hope to burn it one day. Nothing personal, you see, I've dropped it on my foot twice.
