It isn't the fall that makes you die but what all that kinetic energy hitting all at once does to you. Cardboard is weak enough that it crumples when you hit it but strong enough that it can disperse the force. Cardboard is also freaking cheap and it's easy to get a poo poo load of boxes. The idea is that instead of the force applying to you all at once (which makes you die) you get rid of some of it but the rest hits you gradually (which makes you not die).
