It's probably not all that interesting of a game to watching being speedran but it'd be interesting if you have Toby Fox talking about the game and talking behind the scenes stuff during it. This is pretty much the only way I could see it being interesting, and even then it would have to be a Genocide run to keep it short enough to not drag on too long (and have the Undyne and Sans fights for actually showing off skilled gamplay).
