RandomPauI posted:I think it's someone deconstructing the hot dog, presenting it as a gourmet food, and charging accordingly. Deconstructed is more about using alternate techniques to highlight base properties of the ingredients going into some dish. So like a deconstructed hot dog might be spicey diced pork and beef steak, with croutons, mustard-infused oil, and tomato jelly. Build your own stems off some places borrowing parts of hot stone cooking, lava cakes and brownies, mix in your own egg yolk/poached egg or similar reviewing so well that "interactivity" has become a required aspect of haute cuisine. There's only so much interactivity to add so someone checking the boxes on a prix fixe menu might just add build your own sandwich. They've been derided as trends by both normal people and fancy pants because deconstructed often becomes code for "please don't rate the aesthetics of my dish in your review" and everyone without a huge stick up their rear end stopped being entertained by making their own food after paying $100 a plate as soon as it started happening. Deconstructed is basically a big in-joke (except like 1 time a year someone might use it seriously in a way that is appreciable) in Cutthroat Kitchen and Chopped because its the fall back word when they run out of time or resources to do a traditional plating.
