According to Wikipedia anyway https://en.wikipedia.org/wiki/Sashimi#Safety When I worked in the meat and seafood department we were told that frozen stuff could be call sashimi, but not the unfrozen salmon.

I don't know about the FDA, but here in Sweden that was the recommendation up until a few years ago. These days at least farmed Norwegian Salmon is considered parasite free and the regulatory agency considers it ok to consume raw without prior freezing.

That is the guideline but there's a big difference between salmon frozen for 24 hours or whatever the guidelines say and salmon that has been in the back of the freezer for 3 months. In Kitchen Nightmares usually it's the latter case which is why Gordon gets pissed about it.

It's my understanding that pretty much all fish (on any real scale) is actually flash frozen on catch and they just don't tell you. Am I wrong? edit: note I have no problem with it if that is the case.

A pizza discussion at work reminded me of that video of a Brazilian pizzeria where the pizza is covered in mayo or liquid cheese and put in the oven for about 40 seconds. Does anyone have that link handy because I need to make a bunch of New Yorkers cry.

Yeah, I'd throw a few bites of this into my stupid face. I mean, rice burgers are good; mac and cheese burgers probably taste pretty good (but I doubt I could eat a whole one.) I don't have a picture, but the grocery store had a special on turtles the other day. Just three or four headless turtle carcasses, unrefrigerated and bloody, next to a tank full of fish in which at least two were belly-up.
